The solution to this problem was to remove the Payment Document Management ( 2150 ) from the Dynamics Set file. I did not attempt to 'uninstall' the module as that is a whole pain I did not want to start to deal with. Once removed I am able to create, save and post a Cash Receipt with the CHEQUE type.
